Rice burger
  • Risotto Refrigerated risotto leftover from the day before. It should be consistent enough, so that it can easily be given the desired shape. We used a white risotto with fresh ginger.
  • 1 Egg
  • 00 Flour As needed for coating the burger.

Bell pepper sauce
  • 2 Red bel peppers
  • Curry powder
  • Balsamic vinegar
  • Salt
  • Extra virgin olive oil

Instructions
Rice burger
  1. Whip 1 or 2 eggs (according to the quantity of risotto leftover that you want to use) in a bowl and prepare two more bowls with the 00 flour and the breadcrumbs.
  2. Using a spatula and a spoon, pass the cold risotto in the flour first, then in the whipped egg and finally in the breadcrumbs. Form the burgers giving them a round shape of about 5/6 cm diameter and 1 cm thickness.
  3. If you want a more consistent crust and greater texture, you can opt for a double coating, passing the burger in egg and breadcrumbs one more time.
  4. Cook in a pan with a little oil until the consistency is slightly crunchy on the outside and soft on the inside. While cooking, wait before turning it until consistent enough on one side (so it won't break).
Red bell pepper sauce
  1. Peel the peppers (while cold, using a potato peeler) and cut them into slices.
  2. Heat a bit of oil in a saucepan, add the sliced peppers and a drop of balsamic vinegar, then stir-fry for a few minutes. Continue cooking by adding a glass of water and curry powder to your taste; those who like a touch of acidity can add a few drops of lemon juice. Salt to taste.
  3. Cook for 25/30 minutes over medium heat, adjusting with water; the sauce will be ready once it reaches a creamy texture in which the peppers are still visible.
Sandwich preparation
  1. Prepare the sandwich by placing the lettuce leaves first, then the burger and finally the sauce on top. There is no limit to the customization of the sandwich, just as an example grilled vegetables or cheese can be added.
  2. Serve with a side dish to taste. We have prepared thin fried potatoes with their peel.
